Continuity mistake: The morning after Vivian's first night at the hotel, room service brings breakfast. When she's eating a croissant it cuts to a shot of Edward, and when it cuts back to Vivian she's eating a pancake which goes from being half done, to being a whole pancake again. (00:30:55)

Richard Gere (Edward) decides to become partners with the old guy instead of destroying his company. Edward offers Vivian a place to live in New York but she refuses, saying she doesn't want him when he has time, she wants "the fairy-tale". She moves back in with Kit and plans to moves to San Francisco to finish school. Edward comes to her apartment, climbs the fire escape and "rescues" her and they get together.

Answer: As the other answer indicated, it was part of her cheap hooker persona, but it also makes a greater impact on the audience when they see Vivian undergo her "transformation" with the classy designer clothes, toned-down make-up, and her own nicely-styled hair.
